Quick, easy and delicious recipe
I've had this on my list of things to make for a long time, and I wish I would have tried it sooner. My (picky) DH and I loved loved loved it! The 2-year-old wouldn't touch it because it wasn't hot dogs or chicken nuggets, but I suspect he'll come around soon enough.
Thai Shrimp & Noodles
Ingredients
8 oz. spaghetti, broken in two
1 1/2 pounds frozen broccoli florets
1 lb shrimp, peeled (note: I used frozen, already cooked shrimp. I put them in the fridge to thaw the night before.)
1/3 cup creamy peanut butter
1/4-1/3 cup soy sauce
3 Tablespoons rice wine vinegar
2 Tablespoons toasted sesame oil
1 Tablespoon chili oil (or one Tablespoon cooking oil with a dash of Tabasco)
1 Tablespoon grated ginger (or a liberal sprinkling of powdered ginger)
3 garlic cloves, minced
4 green onions, chopped
1/3 cup chopped cashews or almonds
Directions
In dutch oven, bring water to a boil and add pasta. Cook four minutes.
Add broccoli, cook two minutes.
Add shrimp, cook 2-3 minutes or until pink. (note: if using pre-cooked shrimp like I did, I'd suggest cooking 1-2 minutes. Ours were a bit overdone.)
Meanwhile, in bowl, combine peanut butter and soy. Stir in vinegar, sesame oil, chili oil, ginger and garlic.
Drain spaghetti mixture. Stir in sauce.
Add green onions and nuts.
Chow down.
Prep Time: 5 minutes
Cook time: 12 minutes
Serves: 4
